01 / ABOUT THE PLACE

About this place

Down a quiet lane in Tomioka, Koto Ward, the shichirin braziers at Sumibi-yaki Shichirin are best enjoyed with the restaurant's signature 3-day aged offal. Available individually or in combinations like the "3-Day Aged Horumon Mix"—which brings together marucho, abomasum, and small intestines—as well as the salted offal mix, these platters highlight the varied chew, rich rendered fat, and deep savour of distinct organ cuts. Heart skewers cook in moments to a crisp, bouncy finish, while thick-cut upper rumen shows off meticulous cleaning and exceptional freshness.

Substantial prime cuts are equally rewarding. The thick-cut 3-cut platter features generous slices of beef tongue, skirt steak, and kalbi, making an ideal centrepiece for diners craving robust, meaty textures. The charcoal-seared cuts sit naturally alongside cold draught beer or highballs, though cloudy makgeolli and Hoppy are equally popular pairings. Diners often round off their meal with chilled naengmyeon noodles, spicy kalbi soup, or a bowl of rice topped with green onions and raw egg.

The intimate dining room is composed primarily of table seating fitted with under-seat storage boxes to keep bags away from smoke. Open exclusively for dinner, the tables fill up fast, so reserving ahead is advisable for evening gatherings or meals after work.
